These cookies are an excellent accompaniment to a dish of raspberry sorbetto.
1 ½ cups of all-purpose flour
1 ½ teaspoons of baking powder
¼ teaspoon of salt
Combine dry ingredients and set aside.
¼ cup butter (softened)
½ cup sugar
2 large eggs
2 teaspoons of vanilla flavoring
2 Tablespoons of espresso powder (instant coffee is a good substitute)
2 Tablespoons of milk
In mixer, beat butter and sugar till light. Add eggs one at a time, Beating well after each. Add extract. Stir. Remove bowl from mixer. With a spoon, stir in half of the flour mixture. Stir in milk. Add remaining flour mixture and combine well. Add espresso powder and stir to combine.
