Lemon Biscotti

This cookie is tart like a lemon drop and is delightful with tea or espresso. Dipped in a lemony glaze, these are irresistible.

1 cups of all-purpose flour
1 teaspoons of baking powder
teaspoon of salt

Combine dry ingredients and set aside

cup butter (softened)
cup sugar
2 large eggs
zest of 1 lemon
2 teaspoons of fresh squeezed lemon juice
2 Tablespoons of milk

In mixer, beat butter and sugar till light. Add eggs one at a time, beating well after each. Add zest and juice. Stir. Remove bowl from mixer. With a spoon, stir in half of the flour mixture. Stir in milk. Add remaining flour mixture and combine well.
