Biscotti Recipes
Pizza Biscotti
Serve these with a salad or as an hors d'oeurve with red wine.
1 ½ cups of all purpose flour
1 ½ teaspoons of baking powder
½ teaspoon salt
Combine dry ingredients in a bowl and set aside.
¼ cup of butter (softened)
2 Tablespoons sugar
2 Tablespoons of tomato paste
½ teaspoon garlic paste or ¼ teaspoon garlic powder
¼ cup crumbled pepperoni (bake pepperoni till crisp and drain on paper towel)
¼ teaspoon dried oregano
2 large eggs
2 Tablespoon of milk
Beat butter, sugar, tomato and garlic pastes till well combined. Add eggs one at a time, beating well after each. Using a wooden spoon or the paddle on your mixer, mix in half of the dry ingredients. Add milk and stir well. Add the rest of dry ingredients and stir till all the flour is absorbed. Mix in dried oregano and crumbled pepperoni.
